Pumpkin Pie, not just for Halloween

Every American Thanksgiving dinner is not full without a Pumpkin Pie. The orange crusted custard with spiced squash is just too brilliant to miss. Here is the recipe for Pumpkin Pie by Chef Rupesh Khandekar, Chef De Cuisine, Hotel Sahara Star.


  1. Pumpkin cooked – 225 gms
  2. Condensed milk – 200 ml
  3. Eggs – 1
  4. Brown sugar – 85 gms
  5. Ground cinnamon – 3gms
  6. Ground ginger – 2 gms
  7. Grated nutmeg – 1 gms
  8. Sugar dough – 200 gms


  1. Preheat the oven to 170*C.
  2. Line the pie mold with sugar dough.
  3. Mash cook pumpkin add nutmeg, ground ginger, cinnamon in a double boiler.
  4. Add sugar and mix well.
  5. Add eggs gradually at a time and blend well.
  6. Pour the mixture onto the lined dough.
  7. Bake for 30-35 minutes.
